Risotto is one of the most known and loved Italian first courses all over the world, but this recipe includes one of the typical Sardinian products: the cream of Sardinian spiny artichokes, with bottarga and white truffle.
This recipe is really easy to prepare and it has its traditional sardinian ingredients that give a unique and distinguished flavour to your plate!!

Garlic | 2 cloves |
Artichoke, bottarga and white truffle cream | 4 tablespoons |
Vegetable broth | 100 ml |
Extra virgin olive oil | To taste |
Hot pepper | To taste |
Salt | To taste |
White wine | 1 glass |
Steps to prepare this delicious dish:
- First, prepare the vegetable broth and bring it to a boil.
- Meanwhile, in an earthenware pan, pour a glass of olive oil, and sauté a generous amount of chopped garlic and onion.
- Add the rice, brown it slightly, pour a glass of dry white wine, let it evaporate completely and add, little by little, some vegetable broth.
- When almost cooked, remove the pan from the heat and incorporate, stirring vigorously, four tablespoons of artichoke cream, bottarga and white.
