Acciuleddi Sardi is a typical Sardinian dessert made especially during the Carnival period, but it can be prepared on many other occasions. As for the history of this fantastic sweet, there is not much information. We only know that it was prepared by the housewives of Gallura, the north-eastern area of Sardinia, and was then distributed to all passers-by during Carnival.

Preparation method

First of all, put the lard in a saucepan and let it melt, always paying attention, in order not to raise the temperature too much.

Place the flour on a pastry board and, in the center, place the egg, sugar and melted lard.

Begin to knead with a lot of patience until you get a consistent, smooth and soft dough.

Once the right consistency of the dough is reached, place it in a bowl covered with plastic wrap and let it rest in the fridge for 30 minutes

To create these fantastic Sardinian sweets you need to make small cords of about 20 centimeters. 

After the time has elapsed, very thin sticks at least 40/50 cm long are obtained from the dough. Join the ends and twist giving lightly strength on the surface, then join the two ends again and let the “double twist” naturally take shape

After creating your Acciuleddi, put sunflower oil or peanut oil in a pan at a temperature of 170 degrees. Remember that the oil should not be too hot, as if it is too hot, it is not possible to cook the inside of the sweets well.

Dip them into the oil, checking them from time to time until they get a nice browning. Drain them with the help of the fried paper and in the meantime start preparing the glaze.

Sprinkle with honey flavored to taste with lemon zest and colored devils.
