If you are looking for a delicious second dish, beef stew with black truffle mushrooms is a very good option to delight your guests: a complete and gratifying meal, to be eaten also as a single dish.

Preparation method

Wash, peel and finely chop an onion, a carrot and a stick of celery.

In a large and non-stick pan, place 5 tablespoons of extra virgin olive oil and fry the carrot, celery and onion.

Add the meat cubes and brown them well together with the sauté. Then add a level spoonful of flour, sifting it directly into the pan and stir constantly.

Let it cook for a few minutes and then add the red wine. After that, continue cooking for about 40 minutes, cover the pan with a lid and leave a small vent. During cooking, add meat or vegetable broth when needed.

In the meantime, pour the mushrooms with black truffle into a pan and let them simmer for about ten minutes, adding the finely chopped parsley.

Five minutes before the end of cooking the meat, add the mushrooms directly into the pan of the stew, stir gently and finish cooking, seasoning with salt and pepper.

Serve the beef stew with truffle mushrooms accompanying it with fresh bread, mashed potatoes or, in winter, steaming polenta.
