Everyone agrees that pancakes are one of the best options for a tasty breakfast. Although its recipe is very common, here we suggest some new flavours and combinations that will make them special and one of your favorite dishes to begin your day or to enjoy an exquisite dessert.

Pancakes preparation method
Preheat the oven to 200 degrees; have a baking sheet or heatproof platter ready to keep cooked pancakes warm in the oven. In a small bowl, whisk together flour, sugar, baking powder, and salt; set it aside. Whisk together milk, butter and egg in a medium bowl.
Add dry ingredients to the milk mixture; whisk until just moistened (do not overmix; a few small lumps are okay). Heat a large skillet (nonstick or cast-iron) or griddle over medium. Fold a sheet of paper towel in half, and moisten with oil; carefully rub the skillet with an oiled paper towel.For each pancake, put 2 to 3 tablespoons of butter onto the skillet, using the back of the spoon to spread the butter around.
Cook 1 to 2 minutes until the surface of the pancakes has some bubbles and a few bursts. Flip carefully with a thin spatula, and cook until browned on the underside, 1 to 2 minutes more. Transfer to a baking sheet or platter; cover loosely with aluminum foil, and keep warm in the oven. Continue with more oil and remaining butter.
Topping preparation method:
Prepare your pineapple by cutting off the top and bottom and removing the outer layer of skin and any eyes (dark spots). Also, take out the core of the pineapple.
Once the core is removed. Cut the pineapple into 2 halves. This makes slicing much easier.
Use a knife to slice the pineapple into equal width rings. The number of rings you get will depend on how thick you cut them and the starting size of your pineapple.
With the pineapple rings lying on a washable surface, use a soft basting brush to coat each ring with strawberry tree honey.
Sprinkle cinnamon on the top of each honey-coated pineapple ring. Repeat the honey and cinnamon on the other side if desired.
Place prepared pineapple on a medium temperature preheated grill. Cook glazed pineapple for 5 minutes on each side or until lightly browned and tender.
Use care when turning so they will not break apart – using a spatula is a good idea.
Arrange the pancakes on the plate, top with the pineapple slices, add honey syrup and pineapple juice. You can use 2 or 3 pancakes on each plate as you wish, top your decoration with strawberry fruit and mint.
