Preparation method

  • Step 1 – Preheat the oven to 180°C (356°F).
  • Step 2 – In a saucepan, heat the tomato sauce over medium heat. Add the minced garlic, salt, and pepper to taste. Let the sauce simmer for 10 minutes.
  • Step 3 – Grate the pecorino cheese and set aside.
  • Step 4 – In a large frying pan, heat the olive oil over medium heat. Add one sheet of pane carasau at a time and cook for 30 seconds on each side. Remove from the pan and set aside.
  • Step 5 – Take a large baking dish and spread a layer of tomato sauce on the bottom.
  • Step 6 – Place one sheet of pane carasau on top of the tomato sauce.
  • Step 7 – Add a spoonful of tomato sauce and a sprinkle of grated pecorino cheese on top of the bread.
  • Step 8 – Repeat step 6 and 7 until all the bread, tomato sauce, and pecorino cheese are used up. Make sure to end with a layer of tomato sauce and pecorino cheese on top.
  • Step 9 – Bake in the preheated oven for 5 minutes.
  • Step 10 – While the dish is baking, poach the eggs in boiling water for 3 minutes.
  • Step 11 – Take the baking dish out of the oven and place one poached egg on top of each serving of Pane Frattau.
